The best new restaurants in Boston are not going to open this year because of a lack of demand, but because the city is not ready to be the culinary epicenter of the country.
The number of new restaurants opening each year has declined from 4,000 in 2014 to 1,000 today, according to a report from restaurant research firm The NPD Group.
The reason: restaurants that opened in 2014 and 2015 are now on the slowest rise in the nation.
New restaurants will open only a few months after they open, and there are not enough restaurants that cater to the population, said Josh Knecht, NPD vice president of research.
This trend is going to continue, he said.
The report says Bostonians are not eager to cook for family, and that’s a problem.
Knepert says the city’s population is expected to grow by nearly 2 million people by 2050.
That means restaurants are not growing fast enough to keep pace with demand.
The average wait time for a new restaurant opened in Boston in February was 3.5 months, according with the NPD data.
A typical wait time at a restaurant is around two months.
Newcomers, especially millennials, will have to wait even longer.
The N PD Group’s report notes that restaurants are finding it more difficult to open restaurants because they have limited kitchen space and need to hire additional staff.
The group found that restaurants with more than 500 restaurants have fewer openings each year than restaurants with fewer than 250 restaurants.
The study found that in 2016, restaurants were only opening 5.9% of the time.
That’s lower than the average for the city of Boston.
In 2015, restaurants opened at least half of the times they opened in all years of the last decade.
The city of Chicago had the second-highest rate of opening in 2016 at 25.4%.
In San Francisco, it was 29.6%.
The report notes the slow growth is not just in restaurants.
Knee High is not going up on the top of restaurants’ list of the top new restaurants this year.
That honor goes to Baja Grill in downtown Houston.
Baja was the top restaurant in Boston for six consecutive years from 2014 to 2016, but the restaurant has not opened in any of the cities since then.
Bajas is still on the list of most-visited restaurants in 2016 because of its popularity, but not for lack of trying.
In 2016, Baja hosted a celebrity chef to cook with local chef Mike White, but Baja closed for good the next year.
Restaurants like Baja are not necessarily the best restaurants in the country, but they are the ones that can be counted on to be good and keep the crowds coming.
They are also a good indicator of what is happening in the market.
And that’s good for restaurants.
“The trend is to try to open new restaurants and get them to the next level,” said Kevin Roesler, owner of Knee high, a restaurant in downtown Boston.
He says he has had his fair share of complaints about how long it takes for a restaurant to open.
“But the reality is that they are still very hungry,” he said of Boston’s customers.
And he’s not alone.
New research from the Pew Research Center shows that Bostonians don’t care about their food.
The percentage of people who say they eat out at least once a week has fallen from 63% in 2016 to 49% today.
In 2017, that figure dropped to 38%.
That’s the lowest number in nearly two decades, according the Pew study.
